Here's a cherry brandy that's clear as water and bone-dry, not the sweet liqueur the name might suggest. The Schladerer family has been distilling in Staufen, at the edge of Germany's Black Forest, since 1844. Whole ripe cherries ferment pits and all, then go twice through copper stills — which is where that faint almond-marzipan note comes from. The nose is fresh cherry and almond blossom; the finish stays fragrant and stone-fruity. Pour it well-chilled in a small glass after dinner.
