Distilled on Mare Island, California from a 75% corn mash bill, this bourbon spends at least three years in new charred American oak before a final stint in Cabernet Sauvignon barrels — Dave Phinney's wine-country signature showing through in the glass. Expect orange peel and honey up front, caramel and toasted oak underneath, with dark fruit and baking spice easing into a long, oak-tinged finish. Pour it neat or over a single large cube, or let it anchor an Old Fashioned when you want extra depth.
Tasting notes
Aromatically intriguing with brown sugar, caramel, butterscotch and toasty oak. The palate is smooth and lush with loads of vanilla bean, baking spices, maple and baked apples. The finish is long and exciting, begging for another sip.
