Bacanora is Sonora, Mexico's answer to mezcal — made only from wild Agave angustifolia and, until 1992, actually illegal to produce. Santo Cuviso's Blanco comes from a family ranch in Quiriego, where piñas roast for days in an underground volcanic-stone oven over mesquite and oak, then ferment with well water before a double distillation through handmade copper stills. The result: dry, smoky, peppery, with an earthy, mineral finish. Sip it neat to taste Sonora's high desert, unfiltered.
