Not tequila — Santaleza walked away from the denomination to make this one their way, so it is bottled as destilado de agave. 100% blue agave out of Los Altos, Jalisco: four years in oak, then five more resting in stainless steel, nine years all in. At 100 proof it comes across thick and warm — roasted agave, honey, dried fruit and toasted nuts, with a finish that goes on.
