Unusual among rosés: Santa Margherita builds this one on Chardonnay and Sauvignon Blanc, with Pinot Nero vinified separately as a red for about five days purely to lend colour. The white juices cold-macerate on their skins for a week, and malolactic fermentation is blocked to hold the acidity. Trevenezie IGT, northeast Italy.
