Santa Dorotea Valpolicella Ripasso comes from Cantine Giacomo Montresor, a winery founded in 1892 in Verona's Valpolicella district near Lake Garda. This red blend of Corvina, Rondinella, and Molinara is made using the ripasso method: young Valpolicella wine is re-fermented each March on the leftover Amarone grape skins, gaining extra body, warmth, and depth in the process. Expect a deep ruby color, aromas of ripe plum and spice, and a full-bodied palate with soft acidity and a long finish. Pour it alongside grilled meats, braised dishes, hearty pasta, or aged cheese.
