Sandeman's Character Amontillado starts pale and dry, then spends nine years quietly changing character under a living layer of flor yeast before a splash of rich Pedro Ximénez rounds it into medium gold amber. The result: a nose of toasted almond and dried fruit, a palate that opens with gentle sweetness and finishes long, nutty, and clean. Serve lightly chilled alongside pâté, smoked meats, or a good hard cheese — this is a sherry built for the table, not just the nightcap.
