Casa San Matias has been making tequila in the Jalisco highlands since the 1880s, and this unaged Blanco shows exactly why the house has staying power. Made from 100% blue Weber agave cooked in brick ovens, it pours clean and expressive: baked agave up front, then tropical fruit, lemon, and soft vanilla, with a briny minerality and a flick of white pepper on the finish.
