Salvadores' distillers in Tlacolula de Matamoros, Oaxaca take a cue from the michelada bar cart, dropping raw tamarind and four types of freshly cut chile — morita, arbol, guajillo, ancho — straight into the second distillation of their espadín mezcal. The result: earthy roasted agave up front, a tangy tamarind sweetness, and a slow chile burn that lingers through a long, vegetal finish. At 45.2% ABV, it's built to sip neat, though it makes a killer michelada rimmer too.
