Overview

Cirial is one of the karwinskii agaves, the tall trunked ones, and it makes a mezcal that goes savoury instead of sweet. Pit-roasted, tahona-crushed and twice distilled in copper at Tlacolula de Matamoros, this leans into cooked mushroom, damp earth and old wood, with real pepper behind it at 48%.
