Two agaves, one bottle: Sacrvm's Joven Ensamble blends espadín with the rarer, wild madrecuishe agave, sourced by fourth-generation mezcalero Apolonio Ramirez Cruz in San Agustín Amatengo, Oaxaca. The agave hearts are roasted at ground level over wood, crushed by a stone tahona, left to ferment naturally, then double-distilled in copper. Expect bright citrus and floral lift up front, giving way to roasted agave, gentle smoke, and a sweet finish of squash and quince. Sip it slow, neat, to catch every layer.
