What makes Sababa exceptionally rare in the world of agave spirits is its geographic complexity. Rather than sourcing agave from a single estate, Sababa crafts an intricate tapestry of flavors by blending harvested agaves from four of Oaxaca's most iconic and distinct sub-regions:
Matatlán: The world capital of mezcal, providing the classic, robust agave backbone.
Santa Ana Del Río: Bringing a vibrant, sun-drenched fruitiness to the profile.
San Juan Del Río: Introducing clean, crisp, and refreshing herbaceous undertones.
Reforma Yautepec: Contributing a rugged, earthy, and mineral-driven depth.
This ambitious regional blend is brought to life by the hands of Maestro Mezcalero Francisco de los Ángeles. Using time-honored artisanal methods, the agave hearts are roasted in underground stone pits, crushed, fermented naturally, and then double-distilled in traditional stills. This patient, hands-on process captures the heavy plant oils and essential agave characteristics, giving the final liquid a signature, clean smokiness that never dominates the palate.
Nose: An inviting bouquet of bright, sweet cooked agave intertwined with a soft, clean wisp of wood smoke. As it breathes, complex layers of crisp green herbs, lime peel, and fresh pine needles emerge.
Palate: Rich, beautifully oily, and full-bodied. The 92-proof delivery carries an upfront burst of peppery spice, which quickly rounds out into sweet tropical fruits, grilled pineapple, and an earthy, wet-stone minerality.
