Guyana's Demerara Distillers has been coaxing rum out of one small, high-ester still since sugarcane cooperatives merged their stills back in 1670 — the same "heavy" style that built the country's reputation. This two-year expression finishes its journey in Château du Breuil's Normandy cellars, resting in ex-Oloroso sherry casks that layer banana and red fruit over caramel and a faint mineral edge.
