From the sugarcane fields around Lautoka, Fiji, Rum Co. of Fiji has been distilling at South Pacific Distilleries since 1980. Bati White is run through a column still, rested for roughly two years in large oak vats, then filtered through coconut shell carbon — a process the producer says leaves the spirit with no additives. Expect a bright nose of citrus and ripe tropical fruit easing into soft vanilla and oak. Serve it over ice, shake it into a daiquiri, or build it into a tiki-style cocktail for a taste of the South Pacific.
