Rooster Rojo's blanco pulls agave from the highland fields of Los Altos, then travels down to the Los Valles distillery in Jalisco for cooking and double-distillation — two classic tequila landscapes in one bottle. Cooked in an autoclave, run through stainless pot stills twice, bottled unaged at 80 proof, it comes through roasted and citrusy with a snap of black pepper and a clean, herbaceous finish. Built for versatility: solid enough to sip neat, bright enough for a paloma or margarita.
