Rhine Hall, a father-daughter distillery in Chicago, hand-sorts Michigan-grown fruit, ferments it three weeks, then runs it through a German-made column still with no sugar or flavorings added. The nose leans into pear juice, honeydew and lime zest; the palate turns floral and stony. Sip it chilled and neat, or lengthen it into a spritz with soda.
