Inside, Casa San Matias slow-cooks 100% blue Weber agave, then rests it a minimum of six years in French oak — well into extra anejo territory. That patience shows up as caramel, vanilla, dried cherry and plum, with butterscotch and a whisper of dark chocolate. Pour it neat in a glass you love and let it open slowly.
