Some agaves take a decade to grow; wild tepextate takes fifteen to eighteen, foraged from Oaxaca's highlands around Candelaria Yegolé. Rey Campero's Sánchez Parada family cooks it in an earthen pit, crushes it under a stone tahona, then lets wild yeast work through a slow open-air ferment in pine and cypress vats before double-distilling in copper pots. The result: white flowers and yellow pepper up front, easing into coriander and banana leaf, finishing on jalapeño and Sichuan peppercorn. Pour it neat and give it time to unfold.
