Made from Agave Rhodacantha — the wild Mexicano maguey that can take eight to ten years or more to mature — this joven comes from Rómulo Sánchez Parada's palenque in Candelaria Yegolé, Oaxaca. The hearts are pit-roasted, crushed by stone tahona, fermented in open wooden vats, and twice-distilled in copper. Expect melon and creamy sweetness up front, then cracked black pepper, earthy clay, and gentle mesquite smoke into a vanilla-tinged finish. Around 48% ABV. Sip it neat, slowly, alongside good conversation.
