Madrecuishe is a wild agave that takes over a decade to mature, and Rey Campero's version comes from a single family palenque in Candelaria Yegolé, deep in Oaxaca's Sierra Sur. The agave hearts are cooked in a conical earthen pit, milled with a traditional stone tahona, then fermented in open wood vats and double-distilled in copper. Expect pencil shavings and green herb on the nose, giving way to white chocolate, ripe banana, and grilled pineapple. Sip it neat, slow, to catch every shift.
