Jabalí has a reputation among mezcaleros: the wild Convallis agave foams so wildly it can blow the top off a still, which is why it rarely makes it into a bottle. Rómulo Sánchez Parada tamed it in Candelaria Yegolé, Oaxaca, roasting the agave in earthen pits, crushing it by tahona, and distilling twice in copper. The result leans tropical and bright, with orange zest, slate, and a peppery, earthy finish. Sip it neat and slow.
