Chicken Cock's Red Stave takes Kentucky straight bourbon and finishes it in Petite Sirah barrels from J. Wilkes Winery in Paso Robles, California — a handshake between two very different wine and whiskey traditions. Built on a mash bill of 70% corn, 21% rye and 9% malted barley, it comes out at 102.4 proof with an orange-red hue from the wine wood. Expect dark chocolate and caramel up front, sliding into pear, cherry and red currant, with a cranberry-tart, black pepper finish. Pour neat to watch the fruit unfold.
