This espadín is cooked in an earthen oven, crushed by hand and a small grinder, fermented in open wooden vats, then twice-distilled in fragile Filipino-style clay pot stills, a slow, old-world method. Expect sage and pear skin over gentle smoke, with a long, dry finish. Bottled high-proof and rested in glass, so pour it neat and take your time.
