Psagot Peak is a Judean Hills red blend from Psagot Winery, built from Southern Rhône varieties: Syrah, Petite Sirah, and Mourvèdre. The grapes come from high-altitude vineyards in the Judean mountains, where cooler nights slow ripening and concentrate flavor. Aged in French oak, Peak shows dark fruit, black pepper, and dark chocolate layered with dried flowers and a mineral edge, framed by a velvety, structured texture. Decant it and pour alongside braised short ribs or a grilled ribeye for a wine built to stand up to rich, savory dishes.
