Say pisco and most people picture Peru, but this one comes from Chile's Elqui Valley, where the Aguirre family has been distilling for generations at Fundo San Juan El Arenal. It's made entirely from aromatic Alexandria Muscat grapes, run through small copper pot stills, then rested three months in oak and charcoal-filtered to a crystal-clear pour. Expect fresh pear, rose and violet, and a whisper of toasted cinnamon. Shake it into a pisco sour, or sip it neat and let the florals unfold.
