Pio Cesare's Barolo Ornato was the family's first single-vineyard wine, poured from a south-facing amphitheater of limestone and clay in Serralunga d'Alba since 1985. The Nebbiolo ferments and macerates in stainless steel, then ages nearly two years in large French and Eastern European oak casks with a touch of barrique before extended bottle rest. Expect a powerful, full-bodied red with intense dark fruit and firm tannins built for the cellar. Pour it alongside braised short ribs or aged Piedmontese cheese.
