Meet the Dolcetto grown on the hillside above Alba, on a plot the Rinaldi family has farmed since 1920. Grapes come off south-west-facing vines in Madonna di Como's limestone-and-clay soil, fermented in temperature-controlled steel to a bright ruby pour with violet and blackberry aromas and a long, almond-edged finish. Serve slightly cool alongside vitello tonnato or a plate of agnolotti for a proper Piedmontese pairing.
