Part fresh cider-apple juice, part aged apple brandy — Pommeau is Normandy's clever in-between. The Huet family, making cider and Calvados in Cambremer since 1865, blends unfermented must from Fréquin Rouge, Binet Rouge and Bisquet apples with year-old Calvados Pays d'Auge, then rests it 36 to 48 months in oak. The result glows amber with prune, cherry, cocoa and honey. Pour it chilled, around 8–10°C, as an aperitif alongside melon or foie gras.
