Pierre Huet has been coaxing cider from Normandy's Pays d'Auge orchards since 1921 — five generations, 30 hectares, more than 25 apple varieties. Their AOP Cidre Pays d'Auge is old-school in the best way: fruit crushed and left to macerate before pressing, then a slow, spontaneous fermentation from native yeasts and natural bubbles built up over months in bottle.
