Piemaggio's Le Fioraie comes from a Chianti Classico estate in Castellina whose vineyard roots trace back to the 11th century, planted at 380-480 meters in the historic Fioraie hillside. It's built mostly from Sangiovese (90%), rounded out with Canaiolo, Ciliegiolo, and Colorino, then left to ferment spontaneously in steel before easing through concrete tanks and seasoned oak casks for close to two years. Expect ruby color, violet and sour cherry on the nose, a peppery edge, and real structure. Pour it alongside roasted meats or aged pecorino.
