Perrier-Jouët's Belle Époque wears its Art Nouveau anemone bottle — a design Émile Gallé created for the house back in 1902 — but the 2014 vintage inside is all about now: 50% Chardonnay from the Cramant and Avize grand crus, 45% Pinot Noir from Montagne de Reims, and a touch of Meunier, aged six years on lees. Expect vine peach, poached pear, honeyed brioche, and a fine, lively mousse. Pour it slow, in a proper glass, and let the toast notes unfold.
