Artisanal espadín from Cutberto Santiago in Santiago Matatlán, Oaxaca: agave roasted five days in a lava-rock pit, crushed under a tahona, fermented four days in open air and twice distilled in 200-litre copper pots. At 41% the smoke sits behind green fruit and lemon peel rather than over it. Sip it neat.
