Overview

Sotol from Ciudad Madera, in the pine forest country of western Chihuahua, made by fourth-generation vinatero Juan Fernández from wild-harvested Dasylirion wheeleri. The piñas roast three days in a rock-lined underground pit over pine wood, ferment wild, then go twice through a stainless alembic. Lactic and green with a thread of pine smoke.
