Espadín from Santiago Matatlán, pit-roasted, crushed by horse-drawn tahona and fermented with wild yeast, then given a third distillation over Oaxacan cacao. Because the cacao goes through the still rather than in afterwards, it reads as dry bitter cocoa sitting over the smoke, not as sweetness. Neat, room temperature, small pours.
