Mezcal from Santiago Matatlán, Oaxaca, made by fourth-generation maestro Carlos Méndez and his family from 100% Espadín agave that spends around nine years maturing. The agaves roast in an underground pit over volcanic rocks and pine-oak fire, get milled by a horse-drawn stone tahona, ferment naturally in wooden tinas, then double-distill in copper. Expect cooked-agave sweetness, bright orange zest, and a lighter wisp of smoke with tangerine and candied pear. Sip it neat, or let it anchor a mezcal cocktail.
