Paladar comes from one of the last independent founding families still making tequila in Jalisco, and this añejo is a true single-barrel pour — each barrel bottled on its own, so no two batches taste quite alike. The agave is cooked slow in brick ovens, fermented wild in open-air pine boxes, then twice distilled through a copper-and-stainless pot blend before resting in oak. Expect vanilla, caramel, and toasted wood layered with cinnamon, nutmeg, and dried fruit. Pour it neat, or let it anchor an oak-forward old fashioned.
