Rosolio is a nearly-forgotten Italian liqueur, and Ortolan revives it in Berkeley, California, where founder Rob Collier started blending roses from his mother's garden using techniques he learned making amaro and wine. Over 30 heirloom rose varieties give it lifted honeysuckle, jasmine, and orange notes before a savory-sweet, gently bitter finish. Add citrus and the roses' natural pigments shift its color right in the glass. Pour it over ice with a twist, or lengthen it with soda and lime.
