Sotol from Aldama, Chihuahua, made by Gerardo Ruelas at Casa Ruelas from wild Dasylirion wheeleri — a desert spoon plant, not an agave — harvested at eighteen to twenty-two years, roasted in a cylindrical oven, shredded by axe and fermented naturally. Rested in oak, which rounds the desert-herb edge without burying it.
