Machete is Orin Swift's ode to Petite Sirah, blended with Syrah and Grenache and aged 12 months in French oak. Dave Phinney's California red opens with black plum, slate, cacao, wild sage and crushed gravel, then unfolds into blackberry pie and blue fruit layered with orange peel and cherry, finishing on chewy tannins and sweet oak. Pour it alongside grilled steak or braised short ribs for a wine built for bold, hearty fare.
