Meet Madera, the añejo from Nosotros Tequila that trades in patience. A blend of highland and lowland Blue Weber agave rests 21 months in white oak, aged partly in traditional barrels and partly in large pipón vats under Maestra Tequillera Citlali Ovalde, one of Jalisco's first female master distillers. The result: dried fruit and butterscotch on the nose, giving way to toffee, dark chocolate, and cinnamon spice with a citrus lift. Sip it neat in a tulip glass, or pour over a single rock alongside aged cheese, ribeye, or dark chocolate.
