Noilly Prat has been made the same unusual way since 1813: two Languedoc white wines, Picpoul and Clairette, age outdoors in oak barrels along the Marseillan coast, exposed to sun and salt air for up to a year before nearly twenty herbs and spices — chamomile, elderflower, Moroccan coriander, Tunisian bitter orange — are hand-stirred in over three weeks. The result is dry, saline, and layered with citrus and dried herbs. Pour it over ice with a twist, or reach for it to build a proper Dry Martini.
