From the volcanic-spring town of Amatitán, Jalisco, No.7 Reposado starts as Cazcanes' blanco and rests in reworked, recharred American oak — anywhere from a few months to nearly a year, aged to taste rather than a fixed clock. Made from 100% organic Blue Weber agave, it pours honey-gold and unfolds in salted caramel, cooked agave, and baked pear, with a black-pepper snap easing into a dry, oak-tinged finish. Sip it neat by the fire, or alongside grilled pork and warm spice for an evening that lingers.
