Tipsy Sauce - Chocolate Hard Sauce
Cascara is the part of the coffee cherry most roasters throw away, the dried fruit skin around the bean, and New Deal Distillery in Portland, Oregon turns it into a sipping liqueur instead. Made by steeping dried cascara in spirit with pure cane sugar, it opens with raisin, candied fig, and cookie, then settles into dried apricot, black tea, honey, hay, and baking spice. At 25.6% ABV, it doubles as a simple syrup swap, a dessert cocktail base, or a small pour neat after dinner.
