Pechuga is mezcal's celebratory showpiece, and Montelobos makes theirs from organically grown Espadín agave in Oaxaca. Roasted in underground stone pits, milled by tahona, and wild-fermented, it earns its complexity in a third distillation where turkey breast, seasonal fruits, and spices ride along in the copper still. The result: orange peel, pumpkin, and nutmeg on the nose, then tropical fruit, roasted almond, and maple honey. Sip it neat at 43.2% ABV when you want mezcal that feels like an occasion.
