Pechuga is mezcal's celebratory showpiece, and Montelobos makes theirs from organically grown Espadín agave in Oaxaca. Roasted in underground stone pits, milled by tahona, and wild-fermented, it earns its complexity in a third distillation where turkey breast, seasonal fruits, and spices ride along in the copper still.
