Tobalá is the agave that refuses to be rushed — a small, slow-maturing variety prized across mezcal country. Montelobos roasts it in an underground brick pit fired with encino and tepeguaje wood, ferments it wild in open pinewood vats with no added yeast, then distills in copper. The result pours clear and platinum, with lemon, pear and green pepper on the nose giving way to basil, roasted fig and macadamia. Sip it neat, room temperature, in small pours.
