Since 1885, the Montanaro family in Piedmont has built this vermouth around an old house habit: swapping in sweet and bitter orange where most recipes reach for lemon. Aloe, myrrh, licorice, rhubarb, and gentian layer in balsamic depth, and it settles into orange blossom, chamomile, and honeyed citrus with a soft herbal bitterness on the finish. At 16% ABV, pour it chilled over ice for a White Spritz, or into a Bianco Negroni.
