Named for an 11th-century monastery the Cistercian monks raised in Spain's Cariñena country, this Gran Reserva comes from Aguarón vineyards planted over 40 years ago. It's a four-grape blend — Garnacha, Tempranillo, Cariñena and Cabernet Sauvignon — rested two full years in a fifty-fifty mix of American and French oak. Expect red currant, tobacco and a whisper of eucalyptus giving way to cherry and balsamic depth. Decant it beside roast lamb and let the evening stretch.
