Most mezcal comes from a single agave, but this joven ensamble blends two: earthy espadín and the same blue weber agave that fuels tequila, both harvested at 8-10 years old from the highlands of Oaxaca and Zacatecas. After baking underground beneath mountain soil for five days and fermenting in wood vats, it's double-distilled in copper stills into something smooth and earthy, with roasted-agave depth and a mellow, sweet finish. Sip neat or shake into a smoky paloma.
