Raicilla from one of Jalisco's true elders: Hildegardo "Japo" Joya has distilled in Cabo Corrientes, near Puerto Vallarta, for decades, still harvesting agave amarillo by the light of the full moon per local tradition. This Lot #4 batch is roasted in an underground stone oven, fermented naturally in spring water for 23 days, then run through a copper still. Coastal terroir shows in notes of citrus, pepper, and herbs. Pour it neat to taste raicilla's rustic, old-guard side.
