Most mezcal comes from Oaxaca, but this one is born in Tehuacan, Puebla, inside the world's largest cactus reserve. It's an ensamble of wild Agave marmorata and macroacantha, roasted in a lava-rock pit, fermented with natural airborne yeasts, and double-distilled in copper by the Ortega family, four generations of mezcaleros. Expect sweet cooked agave and a striking sea-salt minerality, with a wisp of smoke and a long, mineral finish. Sip it neat at room temperature, in slow, small pours.
